料理を提供する事を生業とする一人として、口に入れる物が健全かどうかを意識するだけでなく、これらが育てられる「里・山・海」への意識を深めた方が良い。

私たち一人ひとりに何ができるのだろうか？
目の前の山や海、あるいは目の前の土が悲鳴を上げているのか？
協調、持続を望んでいるのか？

そんな自然からの声に必死で耳を傾けたい。

この生業を継続して行く事で、少しでも改善していく姿を確かめたい。
そして後世にこのバトンを渡したい。

その事がとても楽しみでならないのです。

Philosophy

As one whose profession is to serve food, we should not only be aware of whether what we put into our mouths is wholesome or not, but we should also deepen our awareness of the “village, mountain, and ocean” where these things are grown.

What can each of us do?
Are the mountains and oceans in front of us, or the soil in front of us, screaming?
Do they want to cooperate and sustain?

We desperately want to listen to such voices from nature.

I want to see even the slightest improvement by continuing this business.
And I want to pass on the baton to future generations.

I am very much looking forward to that.
